This is an excellent time to camp with your kids, hike with your friends, and visit new beaches with your distant family members.

Since you’ll be doing many things during summer, you must stay healthy — and one way of achieving that goal is by making cooling recipes.

The weather can be unforgiving during summer, which is why you need to stay cool and full all the time.

Miso Salmon With Ginger Noodles

Are you a fan of salmon? Looking for ways to enjoy this healthy fish this summer?

Then making miso salmon with ginger noodles should be on top of your bucket list this summer!

Ingredients

  • ½ tsp. smoked paprika
  • 1 ½ tsp. brown miso
  • 1 green pepper, deseeded and cut into small strips
  • 1 tbsp. rapeseed oil
  • 100 grams of wholemeal noodles
  • 160g baby spinach
  • 2 leeks (165g), thinly sliced
  • 2 skinless wild salmon fillets (230g)
  • 2 tsp. balsamic vinegar
  • 3 garlic cloves, finely grated
  • 30g ginger, cut into matchsticks

Instructions

Step 1: Put the noodles in boiling water until soft. Heat your grill to medium and put a piece of foil on the grill rack. Mix one teaspoon of miso with paprika, vinegar, and one tablespoon of water. Pour the source over the salmon and grill for at least six minutes or until the salmon is fully cooked and flaky.

Step 2: Heat oil in a wok and stir-fry leeks, peppers, and ginger over high heat for a few minutes. Add the garlic and cook everything for one more minute. Drain your noodles and mix with the remaining miso sauce. Don’t forget to reserve about two tablespoons of pasta water.

Step 3: Add the drained noodles, miso sauce, and spinach to the wok and cook for a few minutes until the spinach wilts. Pile onto places and top with the salmon.

Aside from being healthy, this recipe is also budget-friendly. Morrison deals include salmon fillets, so you can buy the ingredient at a lower price.

Fresh Fruit Bowl

Whenever you think of summer, frozen fruits will always come to mind.

Eating fruits is one of the easiest and healthiest ways to stay full and replenished during summer.

Thanks to their natural sweetness, these fruits can also satisfy any sweet cravings!

If you have access to some of the freshest fruits during summer, make a fresh fruit bowl.

This recipe is highly versatile as you can use any type of fruit.

Ingredients

  • 1 pint of fresh strawberries, halved
  • 1 to 2 tablespoons corn syrup
  • 2 cups fresh pineapple chunks
  • 2 oranges, sectioned
  • 8 cups fresh melon cubes
  • Fresh mint leaves, optional

Instructions

Step 1: In a large bowl, combine corn syrup and melon cubes. Make sure that the melon cubes are soaked in the syrup.

Step 2: Cover and refrigerate the bowl overnight.

Step 3: Before serving, add the remaining fruits and mix well. Garnish with mint leaves.

Because fruits can aid with weight loss, opt to incorporate fresh fruit bowls into your diet weeks before summer.

Greek Pasta Salad

Everybody loves pasta. This recipe is easy to make and versatile as you can use any ingredients from your pantry.

Or head to the nearest beach first thing in the morning? You can make pasta within minutes and bring them with you!

Another cooling recipe you can do during summer is Greek pasta salad.

This recipe is flavorful and packed with essential vitamins and minerals to help you stay healthy all summer long!

Ingredients

  • ½ red bell pepper
  • Cherry tomatoes
  • Chickpeas
  • Cucumbers
  • Fresh oregano
  • Fresh parsley (optional basil and mint)
  • Kalamata olives
  • Orzo pasta
  • Red onion

For the Dressing

  • Black pepper
  • Dijon mustard
  • Dried oregano
  • Fresh lemon juice
  • Garlic
  • Olive oil
  • Red wine vinegar
  • Salt

Instructions

Step 1: Get the pasta cooking by putting your orzo in boiling water. Don’t forget to add some salt to the water to heighten the flavor of your pasta.

Step 2: Make your Greek salad dressing by mixing all the ingredients mentioned above. To ensure that the dressing suits your taste buds, mix small amounts of the ingredients and adjust as you go along.

Step 3: Chop all of your vegetables into small dice. You can also marinate your diced onions in your dressing to mellow down the spice.

Step 4: Put the cooked orzo pasta in a bowl and mix with the dressing. Top using cubed feta cheese and adjust the flavor by adding more dressing, salt, pepper, or a squeeze of lemon. You can also add basil or fresh mint before serving.

  • 1 tablespoon balsamic vinaigrette
  • 1 whole wheat tortilla (8 inches)
  • 1/4 cup torn mixed salad greens
  • 2 tablespoons alfalfa sprouts
  • 2 tablespoons finely chopped sweet onion
  • 2 tablespoons hummus
  • 2 tablespoons shredded carrot
  • 2 tablespoons thinly sliced cucumber

Instructions

Step 1: Spread the hummus over your tortillas.

Step 2: Layer with carrots, sprouts, cucumbers, onions, and salad greens.

Step 3: Drizzle with vinaigrette and roll up tightly.

You can also add refried beans, avocado, lettuce, and chopped olives to your wraps.
