Ingredients

  • 8 corn tortillas
  • 1 pound of ground beef or shredded chicken
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of vegetable oil
  • 1 can (15 ounces) of refried beans
  • 1 cup of shredded lettuce
  • 1 cup of diced tomatoes
  • 1/2 cup of crumbled queso fresco (Mexican cheese)

Instructions

Step 1

Begin by heating the vegetable oil in a large skillet over medium heat. 

Step 2

Add the corn tortillas, one at a time, and cook them for about 1-2 minutes on each side until they become crispy and golden brown. Once cooked, transfer the tortillas to a paper towel-lined plate to remove any excess oil.

Step 3

In the same skillet, add the chopped onion and minced garlic. Sauté them until they become fragrant and slightly translucent. 

Step 4

Then, add the ground beef or shredded chicken, along with salt and pepper to taste. Cook the meat thoroughly until it is browned and cooked through. Drain any excess grease if necessary.
